What makes a dish an all-star dish in your family? Is it because it’s fast or maybe because it has special memories attached to it? A dish that makes that kind of cut in my house is a meal that the kids don’t fight us on and we (you know the adults) really enjoy too.
Before kids I sure didn’t understand how big of deal that kind of meal would be. Well, let’s be honest there’s a lot I didn’t anticipate like the whole sleep deprived thing lasting way past the newborn years, or how my husband and I find ourselves saying words like our two year old because it’s just so endearing. I mean we don’t do that…often.
Alright, so in honor of my first born turning five tomorrow (boohoo where has time gone?!) I am posting his very favorite meal. There’s a lot of these recipes floating around the internet, but this is how we love it.
Note on the coconut amino sauce – make sure you are buying the soy-free bottle because some of them are actually sourced from soy. See the picture below of my favorite brand!
- 2 cups of chopped carrots
- 1/2 cup coconut amino sauce
- 1/4 cup of honey
- 2 tablespoons of ketchup
- 1 tablespoon of garlic
- 2 teaspoons of Sriracha chili sauce
- 1 tablespoon of sesame seeds
- Stir all the ingredients but chicken together in the slow cooker.
- Place chicken in and cook on high for 3 hours.
- Shred Chicken.
- Serve with rice.
