Why Roasted Chickpeas Are My Favorite Snack:
So here’s the deal. I almost didn’t post this because this recipe doesn’t sound all that glamorous. Chickpeas? Um okay. *But* they are my very favorite afternoon snack. They are packed with 15 grams of protein (per cup) and an excellent source of fiber, folate, and manganese.
Most of us love hummus and guess what hummus is usually made out of? Chickpeas. This is way easier and doesn’t have some of the yucky stuff (like soybean oil) that the packaged stuff has. Give it a try and let me know what you think!
My favorite way to enjoy them is with an ice cold tangerine La Croix! I mix up the way I season them. Right now I am on a garlic salt kick, but you can do anything from taco seasoning to lime and sea salt!
- 1 (15.5) oz of Garbanzo Beans
- 1 teaspoon of olive oil
- Dash of Garlic Salt or Sea Salt and Pepper (your choice!)
- Preheat oven to 400.
- Drain beans.
- Massage olive oil over them.
- Cook for 20 minutes.
- Eat as soon as they slightly cool.
