So I used to feel a bit embarrassed by the number of Mexcian dishes I had on my site. Like what are people going to think? We eat some form of Mexican food every night? I mean we don’t. But we probably eat Mexican at least twice a week. My family just loves it and if I know it’s going to be a win, then it’s something worth fixing. Now, that Cinco de Mayo is around the corner I am feeling a little bit less apologetic about all my Mexi flavors. I can totally share with y’all some of our very favorites that you can whip up this weekend for your family and friends!
First off if you are going to make enchiladas, make your own Homemade Enchilada Sauce. It’s super easy and so much better than the canned stuff. Check out my enchilada sauce recipe that I wrote to share with Tasty Kitchen.
Try my Mexican Ranch Shredded Pork. Friends tell me it works great in pressure cookers as well!

While we are talking about enchiladas, I can’t leave out my Zucchini Enchiladas. You guys, these enchiladas are amazing. If I am honest, when I was developing this recipe I wasn’t exactly sure it would make it on the blog. I try really hard to only share things I love. If something is healthy but doesn’t taste good, it just doesn’t make the cut. It has to be the type of recipe I’d share with a friend or make for company. These zucchini enchiladas were just that. I like them more than the authentic enchiladas sold at our favorite Mexican restaurant in town.
If you are looking for a taco recipe, then you can’t go wrong with Snorkeling Tilapia Tacos. This recipe was inspired by the fish tacos we had on our anniversary in Cancun. Man, I want to go back right now!
If you want to make something crazy fast, then whip up these Sweet Potato Nachos. They are a big hit with kids and grown-ups alike.
