So it’s January and my kids are sick….again, so I decided to make a rich bone broth to help them feel better. Last night I made this roast chicken, with mashed sweet potatoes (coming to the blog soon!), and a spinach salad. I saved the bones and left over chicken. Today I shredded all the chicken and threw them in a pot with two tablespoons of apple cider vinegar, a couple carrots, a stock of celery, and a whole lot of water. My whole house smelled amazing all day! However, I like the overnight version in the crockpot better, you don’t have to babysit it! Try this yummy bone broth if you are interested in some gut-healing nourishing broth. I leave out the chicken feet (who has time for that!) and sometimes swap garlic out for the onion.
I drained the broth and was ready to make healthy chicken tortilla soup. Bill and I have a favorite Mexican restaurant here. We go there when we have like five house hold projects going at once (why do we always think we can do it all in one weekend?) and the kids are falling apart or when I just can even think about dinner. I went through a period of time where I kept getting these awful sinus head aches and Bill would pick up this tortilla soup for me. It always helped! The only thing is I am sure it’s chockfull of msg and tons of sodium, so I tired to recreate it today. I think I got pretty close. It was a big hit! So here ya go:
Clean Eating Chicken Tortilla Soup
6 cups of bone broth or chicken stock
5 baby gold potatoes
2 peeled carrots
2 roma tomatoes
2 tablespoons of fresh minced garlic
1 cup of sugar free restaurant style salsa
3 cups of shredded chicken
1 can of garbanzo beans ( leave out if you aren’t doing legumes)
1 tsp of onion powder
1 tsp of cumin
1/2 tsp of chili powder
Salt and Pepper to taste
Juice and zest of one lime
*Optional cheese if you can do dairy or sweet potato chips
Bring potatoes and carrots to a boil in the chicken broth for 15 minutes or until tender. Adjust heat to medium low.
Blend tomatoes and garlic in blender until smooth. Add to soup and the remainder of ingredients. Finish with lime juice and zest. Top with avocado.
