Remember when I did whole30 and then I had to stop whole30 because I wasn’t feeling good? Can I be honest? I was pretty bummed! I read so much about how whole30 can help heal you gut, so it was pretty disappointing to realize that it made me feel worse. I also couldn’t really understand how that was possible, but I stopped and in general my pain got better. However, my allergies got way worse when I went back to just a general clean-eating life style with grains and dairy.
In hopes to feel better I’ve been doing a lot of research on leaky guts and I truly think the way we eat matters! I’ve decided to go back on a strict Paleo diet. I’d say I stay paleo about 96% of the time and I am feeling better! What’s the difference? I realized I cannot do night shades and by doing paleo without night shades I am thankfully feeling so much better! Lesson learned! Listen to your body. No one can tell you how to eat. Eat to feel well!
I got pretty strict with myself, because I’ve got to stick with this. I’ve learned that you can’t test your will power 24/7. I was doing great on Halloween and didn’t sneak a single piece of candy. Who am I? But the day after was a stressful day and I grabbed a mini Snickers from the kid’s candy stash. One piece was no big deal, but I knew I didn’t want to derail ALL the work I put into my diet, so I needed a special treat on hand that still fit into my health goals.
Guess what? These Almond Butter Cups are better that Justin’s and definitely better than a Reese’s Peanut Butter Cup. They are naturally sweetened with blackstrap molasses, which my doctor told me to add to my diet. Blackstrap molasses has nutrients like iron, magnesium, and calcium!
My family loved these and I plan to make them for special movie nights, parties, and Holidays. Even if you aren’t paleo but just trying to make good choices, I feel pretty confident that you will love these. 🙂
- 1 cup of smooth almond butter (no sugar or oil added)
- 5 teaspoons of coconut oil
- 4 teaspoons of blackstrap molasses
- Cupcake liners
- Heat one cup of almond butter in a liquid pyrex measuring cup in the microwave for one minute.
- Stir in coconut oil and molasses.
- Pour the mixture into cupcake liners.
- Freeze for 30-60 minutes.
- Store in the freezer if your family doesn't eat them all up!
